Ginger-Glazed Carrots - cooking recipe

Ingredients
    3 c. carrots, cut in 1/4-inch slices (about 6 medium)
    1/2 c. water
    1/2 c. apple juice
    2 tsp. margarine
    1 tsp. ground ginger
    1 Tbsp. lemon juice
    2 tsp. packed brown sugar
Preparation
    Cook all ingredients except lemon juice and brown sugar in a 10-inch skillet over medium heat for 12 to 15 minutes, stirring occasionally, until all liquid has evaporated.
    Reduce heat to medium-low.
    Stir in lemon juice and brown sugar.
    Cook 5 minutes, stirring occasionally until carrots are glazed.
    Low-fat and low-cholesterol.
