Duckie'S Coconut Pie - cooking recipe

Ingredients
    5 eggs
    2 c. sugar
    1 stick margarine, softened
    3/4 c. buttermilk
    1 tsp. vanilla
    1/4 tsp. salt
    1 1/3 c. Angel Flake coconut, loosely packed
Preparation
    Cream sugar and margarine.
    Add eggs one at a time, beating after each addition.
    Mix in buttermilk, vanilla, and salt.
    Stir in coconut.
    Pour into 2 pie crusts, not deep dish.
    Bake at 350\u00b0 for 35 to 40 minutes.
    Quicker:
    Pour wet ingredients into blender. Blend and add dry ingredients except coconut.
    Blend until thoroughly mixed.
    Stir in coconut by hand, and bake as above.
