Homemade Salami - cooking recipe

Ingredients
    5 lb. ground chuck
    2 1/2 tsp. mustard seed
    2 1/2 tsp. coarse ground pepper
    2 1/2 tsp. garlic powder
    1 tsp. liquid smoke
    5 rounded tsp. Morton Tender Quick
Preparation
    Mix all together and refrigerate for 3 days, mixing well each day.
    On the fourth day, mix well and form into 5 rolls.
    Bake on rack over a pan for 11 hours at 140\u00b0 or 9 hours at 150\u00b0.
    Turn rolls every 2 hours; cool.
    Wrap and may be frozen.
