Chili Con Carne (Beef, Lamb, Pork Or Veal)(No. K-114) - cooking recipe

Ingredients
    8 lb. small chili beans
    35 lb. meat carcass or 25 lb. ground meat or 18 lb. cooked ground meat
    4 cloves garlic, crushed
    1 lb. fat (1 pt.)
    6 oz. ground chili pepper
    2 oz. chili powder (8 Tbsp.)
    6 oz. salt (12 Tbsp.)
    2 gal. meat stock (8 qt.)
    1 (No. 10) can tomatoes
Preparation
    Wash beans thoroughly.
    Cover with cold water; soak 8 hours. Cover and heat to boiling point.
    Reduce heat and simmer 1 1/2 hours or until tender, but not split or mushy.
    Drain.
