Stuffed Baked Potatoes - cooking recipe

Ingredients
    4 large potatoes, baked
    1/2 c. warmed skim milk
    2 c. cooked, chopped broccoli or spinach
    1 c. part skim Ricotta cheese
    2 Tbsp. grated Parmesan cheese
    2 small cloves garlic, finely chopped
    1/4 tsp. salt
    1/8 tsp. pepper
Preparation
    Scoop out insides of potatoes, leaving 1/4-inch shell.
    Mash potatoes with milk in a bowl.
    Stir in broccoli or spinach, cheeses, garlic, salt and pepper.
    Spoon filling back into potato skins.
    Sprinkle with more grated Parmesan cheese (about 2 tablespoons) and bake on cookie sheet at 350\u00b0 for 20 minutes.
