Carrot Cake - cooking recipe
Ingredients

4 eggs
1 1/2 c. oil
2 c. vanilla
sugar or brown sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
2 c. unbleached flour
1/2 tsp. cloves
1/2 tsp. nutmeg
1 Tbsp. pure vanilla extract
2 c. shredded carrots
1 c. nuts, coarsely chopped
Preparation

In a medium-size bowl, mix flour, baking powder, soda, spices and nuts.
In another bowl, blend oil, sugar and eggs.
Beat until smooth and creamy.
Add vanilla and carrots.
Add flour mixture and mix until thoroughly blended.
Generously grease pans.
Bake at 350\u00b0 for 45 minutes in 9 x 13-inch pan or 2 (8 or 9-inch) rounds pans for 25 minutes or until tester comes out clean.
Delicious with cream cheese icing!
