Beef Roast With Mushrooms - cooking recipe
Ingredients

4 lb. chuck, round or rump
1/4 c. butter
2 lb. mushrooms, sliced
1 small onion
3 cloves
salt and pepper to taste
white wine or sour cream (optional)
Preparation

In large, heavy saucepan, melt butter.
Add meat and brown on all sides.
Peel onion and stick cloves into onion.
Add onion, mushrooms and salt and pepper.
Cover tightly and simmer for 30 minutes per pound.
Check occasionally for moisture.
Add a little wine or water if needed.
When roast is tender, meat juice may be thickened with sour cream or thinned with wine.
