Black Beans And Rice - cooking recipe

Ingredients
    2 Tbsp. olive oil or olive oil spray and water
    1 medium onion, chopped
    2 or 3 cloves of garlic, pressed
    1 small green pepper, chopped or use a mix of red, yellow, etc.
    2 medium ripe tomatoes or 4 canned Italian plum, drained and chopped
    salt and pepper
    2 c. cooked black beans or 1 (15 oz.) can, drained and rinsed
    1 c. white rice
Preparation
    Cook onion, garlic and peppers in hot oil for about 2 minutes. Add tomatoes and cook 3 or 4 minutes.
    (I often use a can of pasta-style chunky tomatoes, undrained.) Season with salt and pepper.
    Stir in beans and cover and let simmer while rice is cooking.
    Serve over rice.
