Zucchini Cake - cooking recipe
Ingredients

3 eggs
2 c. sugar
2 tsp. vanilla
1 c. oil
2 c. shredded zucchini
1 c. crushed pineapple with juice
1 c. coconut
1 c. nuts
3 c. flour
1 tsp. baking powder
1 tsp. soda
1 tsp. salt
Preparation

Beat eggs, sugar, vanilla and oil together until fluffy.
Add shredded zucchini.
Sift dry ingredients together, add to egg mixture.
Stir in crushed pineapple.
Add coconut and nuts.
Pour into 9 x 13 x 2-inch greased and floured pan.
Bake at 350\u00b0 for 1 hour.
