Low-Fat Macaroni And Cheese - cooking recipe

16 oz. nonfat cottage cheese
16 oz. Healthy Choice Mozzarella
16 oz. Healthy Choice Cheddar
16 oz. elbow macaroni
Preparation

Boil macaroni to the \"al dente\" stage (slightly firm); drain in colander.
While macaroni is still hot, add cottage cheese; mix well.
Add Mozzarella; mix well.
Add 3/4 of Cheddar; mix lightly, spreading the rest of the Cheddar over the top.
Garnish with a tomato slice and green pepper, if desired.
This can be served immediately or reheated later in the oven at 350\u00b0.
If you want the top brown, use the preheat setting.
Add the garnish just before serving.
