Coconut Shrimp - cooking recipe

Ingredients
    2 eggs
    1 1/2 c. flour
    1/2 c. dark rum
    1/4 c. milk
    1 Tbsp. baking powder
    1/4 tsp. ground cloves
    1/4 tsp. ground allspice
    1/4 tsp. black pepper
    2 c. shredded coconut
    16 medium-sized shrimp, peeled and deveined
    vegetable oil for frying
Preparation
    In medium-sized bowl, mix eggs, 1 cup flour, rum, milk, baking powder and spices.
    Place remaining flour in small bowl.
    Spread coconut on small plate.
    Dredge shrimp in flour, then dunk it in the batter, then dredge it in coconut.
    Place coated shrimp on waxed paper.
    Carefully drop shrimp in hot oil and fry 3 to 5 minutes.
    Drain on paper towels and serve hot.
