Leek And Sweet Pepper Toss - cooking recipe

Ingredients
    1 1/2 tsp. margarine
    1/3 c. minced sweet red pepper
    1/3 c. minced leek
    2 Tbsp. stock
    1/2 tsp. dried thyme
    1 Tbsp. grated Romano cheese
Preparation
    In a microwave, melt margarine in a small dish for 20 seconds on High.
    Add pepper, leek, stock and thyme.
    Cover with vented plastic wrap; microwave on High until vegetables are tender, about 3 minutes.
    Toss with cooked broccoli or other vegetables; sprinkle on cheese.
    Serve warm as a side dish or tossed with hot pasta as an entree.
    Serves 4.
