Roast Chicken - cooking recipe

Ingredients
    3 lb. chicken
    1 bay leaf
    1/2 tsp. dry thyme
    1 clove garlic
    1 onion, cut in chunks
    2 Tbsp. margarine
    1 c. chicken broth
    olive oil
Preparation
    Wash and dry chicken.
    Place the bay leaf, thyme and garlic in the cavity of the chicken.
    Sprinkle with salt and pepper and then truss.
    Place chicken in roasting pan; scatter onion chunks around it.
    Rub with olive oil.
    Place the chicken on its side and bake for 20 minutes.
    Occasionally, pour off fat.
    Place chicken on its back.
    Add margarine and chicken broth and roast 20 minutes longer, continuing to baste.
    It is done when juice is clear.
