Chicken 'N Rice Salad - cooking recipe

Ingredients
    2 c. cooked rice, cooled
    2 c. cooked chicken, diced (white meat preferred)
    1 1/2 c. cooked peas, cooled
    1 1/2 c. celery , diced
    1 Tbsp. grated onion
    1 tsp. salt
    1 c. mayonnaise or salad dressing (less if preferred)
    1/4 tsp. pepper
    lettuce
Preparation
    In large bowl, combine rice, chicken, peas, celery and grated onion; set aside.
    In another bowl, blend together mayonnaise, salt and pepper.
    Thoroughly mix into chicken and rice mixture. Chill an hour or more before serving.
    Serve on lettuce.
    Makes 8 to 10 servings.
