Chicken Enchilada Soup - cooking recipe
Ingredients

1 Tbsp. vegetable oil
1/4 c. chopped onion
1 clove garlic, minced
3/4 c. pepper and onion relish (Harry and David's)
1 1/2 c. chicken broth
1/2 c. cream
salt (I omit)
3/4 c. Monterey Jack cheese, grated
1 c. cooked chicken breasts, diced
Preparation

Heat oil in a pot over medium heat and saute onion and garlic. Add relish and chicken broth and cook with pot covered for 15 minutes over low heat.
Add cream, salt and chicken.
Simmer another 8 to 10 minutes over low heat.
Stir in cheese and serve hot.
