Eggplant Au Gratin - cooking recipe

Ingredients
    4 small eggplants
    2 large onions
    1 lb. sharp cheese
    2 eggs
    1 stick butter
Preparation
    Peel and boil eggplant in salted water until soft; strain off water and mash.
    Fry onions in butter.
    Beat eggs.
    Grate cheese. Combine all ingredients; salt and pepper to taste.
    Place in buttered pan.
    Bake 30 minutes.
    Dot with butter; cover with crackers.
    Return to oven; cook 10 minutes.
    (May use potato chips, crushed, for topping.)
