Seafood Vera Cruz - cooking recipe

Ingredients
    4 fish fillets (flounder, cod, etc.)
    4 peeled, chopped tomatoes (can use canned)
    1 large diced onion
    1 julienned green pepper
    2 Tbsp. tomato paste
    1 Tbsp. minced garlic
    2 Tbsp. capers
    1 Tbsp. chopped parsley
    sliced black olives
    olive oil
    salt and pepper
    2 Tbsp. Worcestershire sauce
    juice of 1 lemon
Preparation
    Place fish fillets in Pyrex dish; salt and pepper to taste. Add lemon juice and Worcestershire sauce; allow to marinate while preparing vegetables.
    Saute onion in olive oil until golden.
    Add tomatoes, pepper, garlic, capers, black olives, tomato paste and chopped parsley.
    Cover; cook for 10 minutes.
    Top fish with this mixture.
    Bake at 350\u00b0 for 10 minutes per inch of thickness of fish.
