Ingredients

1/3 c. unsalted butter
3 oz. cream cheese, softened
3/4 c. sugar
1 egg
2 tsp. almond extract
1 Tbsp. orange juice
1 c. flour
2 tsp. baking powder
1/4 tsp. salt
1 (14 oz.) pkg. sweetened flaked coconut
food coloring (as desired)
Preparation

Preheat oven to 350\u00b0. In a large mixing bowl, measure butter, cream cheese and sugar and beat together. Add egg, almond extract and orange juice; beat well. Mix together flour, baking powder and salt. Gradually add to butter mixture until well blended. Stir in 4 cups of coconut; cover and chill 1 hour.
