Crispy Chicken Rolls - cooking recipe
Ingredients

6 chicken breast halves, boned
1 1/4 c. cooked shrimp, chopped
1/3 c. softened margarine
1/2 c. chopped green onion
oil
1 c. flour
1 1/4 tsp. baking powder
1 tsp. salt
3/4 c. water
Preparation

Bone chicken breasts if not previously boned.
Pound each half breast to about 1/4 inch thickness.
Combine chopped shrimp, margarine and green onion.
Salt and pepper to taste.
Spoon shrimp mixture onto center of each breast.
Roll breast and skewer or secure with toothpick.
Heat 1 inch oil in skillet.
Make batter from flour, baking powder, salt and water.
Roll or dip each breast in batter.
Fry in hot oil until golden brown (about 15 minutes), turning frequently.
Drain on paper towels.
Serve quickly to retain crispiness.
