Zucchini Cake - cooking recipe

3 eggs
1 c. oil
2 c. grated zucchini
1 tsp. baking powder
1 tsp. salt
3/4 c. raisins (optional)
2 c. sugar
3 tsp. vanilla
2 c. flour
2 tsp. baking soda
3 tsp. cinnamon
1 1/2 c. nuts (optional)
Preparation

Combine eggs, sugar, oil and vanilla. Beat until smooth.
Add grated zucchini and stir.
Mix together flour and other ingredients. Add raisins and nuts to dry ingredients. Stir into zucchini mixture.
Pour into greased and floured 9 x 13-inch cake pan. Bake at 325\u00b0 for 50 minutes or until cake tests done. Frost with cream cheese frosting.
