Shrimp Skewers - cooking recipe

Ingredients
    2/3 c. rice
    6 oz. large shrimp
    3 cherry tomatoes
    3 pearl onions
    3 (1-inch) pieces bell pepper
    6 1/2-inch slices zucchini squash
    3 whole mushrooms
    3/4 c. unsweetened pineapple chunks
    1/2 c. sugar-free gelatin cubes with 2 Tbsp. whipped topping
    2 Tbsp. Italian salad dressing
    1/2 c. sugar
Preparation
    Alternate shrimp, vegetables and pineapple on 3 skewers. Broil or grill approximately 5 minutes on each side or until done. Baste with Italian dressing while cooking.
    Serve over rice.
