Zesty Black Bean Soup - cooking recipe

Ingredients
    4 slices bacon
    1 large onion
    1 garlic clove, minced
    2 (15 oz.) can black beans, drained
    14 oz. can beef broth
    1 1/4 c. water
    3/4 c. picante sauce
    1/2 to 1 tsp. salt (optional)
    1/2 tsp. oregano
    sour cream
Preparation
    Cook bacon in 3-quart saucepan until crisp.
    Remove to paper towels.
    Add onion and garlic to drippings; cook and stir 3 minutes.
    Add beans, broth, water, picante sauce, salt and oregano.
    Cover and simmer 20 minutes.
    Spoon into bowls.
    Dollop with sour cream, if desired.
    Sprinkle with reserved crumbled bacon.
    Serve with extra picante sauce.
    Serves 6 to 8.
