Garden Ratatouille - cooking recipe

Ingredients
    6 oz. bacon, chopped
    1/3 c. olive oil
    3 medium green or red bell peppers, cut in 1/2-inch squares
    1 medium onion, chopped
    1 Tbsp. minced garlic
    2 medium zucchini, cut in 1/2-inch squares
    1 lb. eggplant, cut in 1/2-inch squares (peeled, unless young and fresh)
    3 large ripe tomatoes, peeled and cut in 1/2-inch squares
    1 tsp. salt
    1/2 tsp. pepper
Preparation
    Fry bacon until lightly browned.
    (Drain off excess fat.) Add olive oil and heat.
    Add chopped peppers, onion and garlic; saute for 3 to 5 minutes.
