Pikes Peak Potatoes - cooking recipe
Ingredients

1 1/2 lb. new potatoes (unpeeled)
salt and freshly ground pepper to taste
3/4 c. heavy cream
1/2 c. chicken broth
1 c. shredded Swiss cheese
Preparation

Slice potatoes and place in greased 9 x 9-inch baking dish. Sprinkle with salt and pepper. Mix cream with broth and pour over potatoes. Cover and bake at 350\u00b0 for 30 minutes. Uncover and bake for another 30 minutes. Sprinkle with cheese and return to oven until cheese is melted.
Serves 6.
