Squash Fritters - cooking recipe

Ingredients
    1 1/4 c. flour
    1 1/2 tsp. baking powder
    1/2 tsp. sugar
    1 tsp. salt
    1/2 c. sour cream
    1 egg
    1 Tbsp. vegetable oil
    3 c. coarsely grated yellow squash or zucchini
    1 medium onion, grated
    pepper to taste
    oil for frying
Preparation
    Combine first 7 ingredients, beating until smooth.
    Stir in squash and onion.
    Add pepper.
    Drop mixture by tablespoon into a hot greased skillet, cooking until golden brown (as for pancakes). Drain on paper towel.
    Makes about 2 dozen.
