Ingredients

1 (9-inch) unbaked pastry shell
3 eggs
1/2 c. firmly packed light brown sugar
1 c. cream of coconut
2 Tbsp. butter, melted
1 tsp. vanilla extract
1 tsp. vinegar
1 c. chopped pecans
Preparation

Preheat oven to 350\u00b0.
In medium bowl, beat eggs.
Add sugar; stir until sugar dissolves.
Add remaining ingredients; mix well. Pour into prepared pastry shell.
Bake 30 to 35 minutes or until center is puffed.
Cool.
Chill.
Garnish with whipped cream if desired.
Refrigerate leftovers.
One-half cup of flaked coconut may also be added if desired.
