Marinated Zucchini Salad - cooking recipe

Ingredients
    6 small zucchini, thinly sliced (about 1 1/4 lb.)
    1/2 c. chopped green pepper
    1/2 c. diced celery
    1/2 c. diced onion
    1 (2 oz.) jar diced pimiento, drained
    2/3 c. vinegar
    1/3 c. vegetable oil
    1/2 c. sugar
    3 Tbsp. white wine vinegar
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Combine zucchini, green pepper, celery, onion and pimiento in a medium bowl and set aside.
    Combine remaining ingredients in a jar; cover tightly and shake vigorously.
    Pour marinade over vegetables; toss gently.
    Cover and chill 8 hours or overnight. Serve with a slotted spoon.
    Makes 8 servings.
