Squash Casserole - cooking recipe

Ingredients
    3 c. cooked yellow squash
    3/4 c. chopped onion
    2 Heritage eggs, beaten
    1 c. Heritage milk
    1 small jalapeno (seeded), chopped
    3/4 c. margarine
    2 c. Ritz cracker crumbs
    1 tsp. salt
    1/2 tsp. pepper
    1 c. grated cheese
    paprika to taste
Preparation
    Drain cooked squash and add margarine, salt and pepper, jalapeno and milk.
    Mix and add beaten eggs, onions, cheese and cracker crumbs.
    Pour into greased casserole.
    Bake uncovered at 375\u00b0 for about 40 minutes.
    Sprinkle with paprika.
    Makes 8 servings.
