Cheddar Rice Patties - cooking recipe

Ingredients
    2 c. cooked rice
    1 c. (4 oz.) shredded low-fat Cheddar cheese
    1/2 c. minced onion
    3 Tbsp. all-purpose flour
    1/2 tsp. salt
    1/4 tsp. ground black pepper
    3 egg whites
    1/8 tsp. cream of tartar
    vegetable cooking spray
    applesauce (optional)
    low-fat sour cream (optional)
Preparation
    Slice center cuts of eggplant into 1-inch thick slices.
    Fry in oil until partially clear. Drain on paper towels.
    Place cuts into a 9 x 13-inch buttered casserole dish. Top each slice with Mozzarella cheese and 1/4 cup highly seasoned spaghetti sauce. Bake at 350\u00b0 for 20 to 25 minutes on lower rack.
    Serves 6.
