Fresh Coconut Cake - cooking recipe

Ingredients
    6 egg whites, beaten
    1 c. Crisco
    1 c. coconut water (add tap water, if needed)
    2 c. flour
    2 tsp. baking powder
    1 tsp. salt
    2 tsp. lemon extract
    2 c. sugar
Preparation
    Crack and peel fresh coconut and grate.
    Cream sugar and Crisco.
    Add coconut water and flour.
    Mix until smooth.
    Fold in egg whites.
    Bake for 25 to 30 minutes at 350\u00b0.
