Ingredients

1 1/2 c. crushed saltine crackers
1/2 c. coconut
3/4 c. sugar
1 tsp. vanilla
2 eggs, separated
1 qt. milk
Preparation

Beat egg yolks and add to the milk.
Combine crackers with the egg and milk mixture.
Add 1/2 cup sugar, vanilla and coconut in a saucepan.
Cook until thickened.
Allow egg whites to reach room temperature, then beat gradually, adding the remaining 1/4 cup sugar.
Beat until stiff peaks form.
Spread egg whites on top of cracker pudding and place in 350\u00b0 oven until delicately brown.
