Greek Oven Fries - cooking recipe

Ingredients
    2 medium baking potatoes (about 1 lb.), unpeeled
    3 cloves crushed garlic
    2 Tbsp. olive oil
    vegetable cooking spray
    1 tsp. dried leaf oregano
    salt and pepper to taste
    malt vinegar
Preparation
    Soak garlic in olive oil for at least 1 hour.
    Scrub potatoes; cut lengthwise into 8 wedges each.
    Place wedges in a bowl and cover with very cold water.
    Allow to stand for 30 minutes.
    Drain and pat dry with paper towels.
    Remove garlic from oil.
    Toss wedges in oil until coated.
    Coat baking sheet with cooking spray. Place potatoes, skin side down, on baking sheet.
    Sprinkle potatoes with oregano, salt and pepper.
    Bake at 400\u00b0 for 50 minutes.
    Serve with malt vinegar.
