Apricot-Glazed Sweet Potatoes - cooking recipe

Ingredients
    3 lb. sweet potatoes, cooked, peeled and cut up
    1 c. packed brown sugar
    5 tsp. cornstarch
    1/4 tsp. salt
    1/8 tsp. ground cinnamon
    1 c. apricot nectar
    1/2 c. water
    2 tsp. grated orange peel
    2 tsp. butter or margarine
    1/2 c. chopped pecans
Preparation
    Place sweet potatoes in a 13 x 9 x 2-inch baking dish and set aside.
    In a saucepan, combine sugar, cornstarch, salt and cinnamon; stir in apricot nectar, water and orange peel.
    Bring to a boil, stirring constantly.
    Cook and stir 2 minutes more.
    Remove from heat, stir in butter and pecans.
    Pour over sweet potatoes. Bake, uncovered, at 350\u00b0 for 20 to 25 minutes or until heated through.
    Yield:
    8 to 10 servings.
