Ingredients

8 c. strawberries, crushed
5 c. sugar
2 Tbsp. lemon juice
Preparation

Mix strawberries, sugar and lemon juice in Dutch oven.
Heat to boiling, stirring frequently, until translucent and jam is thick, about 25 minutes.
Quickly skim off foam.
Pour jam into sterilized jars, leaving 1/4-inch headspace.
Makes 5 half pint jars.
