Baked Turkey Stew - cooking recipe

Ingredients
    2 stalks celery, thinly sliced
    1 medium red or green sweet pepper, chopped
    1 medium onion, chopped
    1 clove garlic, minced
    2 Tbsp. margarine or butter
    4 tsp. all-purpose flour
    1 Tbsp. chili powder or less
    1/4 tsp. dried thyme, crushed
    1/4 tsp. dried rosemary, crushed
    1/8 tsp. ground red pepper, if desired
    1 (14 1/2 oz.) can stewed tomatoes
    1 (12 oz.) can vegetable juice cocktail
    1 1/2 c. or more chopped cooked turkey
    2 c. hot cooked rice
Preparation
    Cook first 4 ingredients in hot margarine or butter until tender.
    Stir in next 5 ingredients.
    Add undrained tomato and juice cocktail.
    Cook and stir until bubbly.
    Add turkey. Transfer to 1 1/2-quart casserole.
    Cover; bake in 375\u00b0 oven 20 minutes or until heated through.
    Season with salt and pepper. Serve over rice.
    Serves 4.
