Sweet Potato Custard (Pie) - cooking recipe
Ingredients

2 c. cooked, mashed potatoes
1/2 c. milk
1 1/4 c. sugar
2 large eggs, beaten
1 tsp. vanilla extract
1 Tbsp. cornstarch
1/2 c. butter or margarine
Preparation

Measure cooked, mashed potatoes and put in large mixer bowl to process on low speed to mash well.
Add margarine while potatoes are hot.
Add sugar, eggs, milk and vanilla.
Pour into an unbaked pie shell.
Bake in preheated 350\u00b0 oven for about 1 hour until well set and lightly browned.
Yield:
1 nine-inch pie.
