Creamed Spinach - cooking recipe

Ingredients
    2 lb. fresh spinach
    1 c. water
    1 Tbsp. butter
    1 Tbsp. flour
    1/2 c. milk
    1/2 c. cream
    1/2 tsp. salt
    1 small onion, grated
Preparation
    Wash spinach well to remove sand.
    Separate leaves and cut off roots.
    Bring water to boil in pot and add spinach.
    Boil, uncovered, for about 2 minutes.
    Drain and chop fine.
    Melt butter and blend in the flour.
    Add milk slowly and then the cream; stir constantly until smooth.
    Bring to boil for about 1 minute.
    Add chopped spinach.
    Mix and heat through.
    Add salt and grated onion; mix well.
    Heat for another minute.
    Serves 6.
