Chicken Florentine With Fresh Mushrooms - cooking recipe

Ingredients
    4 skinless, boneless chicken breast halves
    1 small onion, quartered
    1 Tbsp. reduced calorie margarine
    2 c. sliced fresh mushrooms
    1 pkg. (10 oz.) frozen chopped spinach, cooked and drained, or 2 c. chopped cooked fresh spinach
    1/4 tsp. nutmeg
    1/4 tsp. salt
    fresh ground pepper
    4 tsp. grated Parmesan cheese
Preparation
    In medium size saucepan, combine chicken breast and onion with water to cover.
    Cover and poach over medium-low heat until just white throughout, about 20 minutes.
    Meanwhile, melt margarine in a large frying pan.
    Add mushrooms and cook until tender, about 5 minutes.
    Preheat broiler.
    Place spinach in an 8-inch baking dish. Sprinkle with nutmeg, salt and pepper to taste.
    Arrange chicken in single layer over spinach.
    Top with mushrooms.
    Sprinkle with cheese.
    Broil 1 to 2 minutes until cheese is melted.
