Ingredients

1 - 8 oz. box corn muffin mix
1/4 cup all-purpose flour
2 Tbsp. chili powder
1 egg
3 Tbsp. milk
1 - 16 oz. can refried beans
1 - 15 oz. can chili without beans
2 cups shredded Monterey jack cheese, or cheddar
optional toppings, sliced olives, chopped onions, peppers, corn or cilantro
Preparation

Preheat oven to 400 F. Grease a 9 x 13 inch baking pan. Mix muffin mix, flour, and chili powder. Beat in egg and milk. Pat into pan with hands. Spread refried beans, then chili aver the crust. Sprinkle with cheese. Bake for 15-20 minutes, the cheese should be melted and the crust firm. Remove from heat and allow to cool 10 minutes. Cover with optional toppings if desired. Cut into squares. Makes 12 pieces.
