Southern Beef And Greens Soup - cooking recipe

Ingredients
    3 to 4 lb. beef shanks
    4 1/2 c. water
    1 Tbsp. salt
    1/4 tsp. pepper
    1/2 lb. collards or spinach, thinly sliced
    1/2 tsp. basil
    1/2 tsp. marjoram
    2 medium size potatoes
    1 large onion, chopped
    1 (10 oz.) can tomatoes
Preparation
    Place beef, water, salt and pepper into Dutch oven; cover tightly and simmer 1 1/2 hours.
    Add greens, basil and marjoram and continue cooking, covered, 30 minutes.
    Cut potatoes into cubes.
    Add potatoes, onion and tomatoes to meat and cook for 40 minutes longer.
    Remove shanks; cut meat from each and return meat to soup.
    Makes 5 to 6 servings.
