Eggplant Supreme - cooking recipe

Ingredients
    1 eggplant, peeled and cubed in about 1/2-inch cubes
    2/3 c. chopped celery
    1 onion, chopped
    1 small green pepper, chopped
    1/2 c. oleo, melted
    1 c. grated Cheddar cheese
    1 tsp. Worcestershire sauce
    1/4 tsp. salt
    1/8 tsp. pepper
    1 egg, well beaten
    crackers, crumbled
Preparation
    Boil the eggplant until tender. Drain well. Saute celery, onion and green pepper in oleo.
    Put eggplant and celery mixture into 1 1/2-quart casserole and add other ingredients; mix well. Bake at 350\u00b0 until browned.
    May be made a day ahead or frozen for future use.
