Tuna Stuffed Bell Peppers - cooking recipe

Ingredients
    4 large red, green or yellow bell peppers
    1/2 c. vegetables
    1/4 c. chopped green onions
    1 clove garlic, minced
    2 Tbsp. vegetable oil
    1 c. cooked pasta or rice
    1 (12 1/2 oz.) can Star-Kist tuna, drained and flaked
    1 medium tomato, chopped
    1/3 c. Niblets corn
    1 egg, beaten
    1/2 tsp. dried thyme, crushed
    salt and pepper to taste
    1/2 c. shredded low-fat Mozzarella cheese
    chopped parsley
Preparation
    Cut peppers lengthwise into halves.
    Remove seeds and ribs from peppers.
    Place peppers in boiling water for 3 minutes. Rinse; drain, cut side down.
    Set aside.
