Mexican Corn Bread - cooking recipe
Ingredients

1 c. corn meal
1 c. milk
1 (No. 303) can cream-style corn
2 well beaten eggs
1/2 tsp. soda
3/4 tsp. salt
1/2 c. bacon drippings
1/2 lb. ground beef, sauteed
1 large onion, chopped
1/2 lb. cheese, grated
2 jalapeno peppers, chopped (pimento or bell pepper may be used in place of jalapeno peppers)
Preparation

Mix first 7 ingredients.
Grease a large iron skillet or casserole dish. Sprinkle on thin layer of meal and let brown slightly.
Pour half of the batter and sprinkle cheese, meat, onion and peppers evenly over batter.
Pour remaining batter over top. Bake at 350\u00b0 for 1 hour.
Suitable for freezing (prepare, freeze and then bake).
