Honey-Dijon Zucchini - cooking recipe

Ingredients
    4 c. sliced zucchini
    1 c. red pepper, cut in 2 x 1/4-inch strips
    1 Tbsp. plus 1 tsp. Dijon mustard
    2 tsp. honey
    freshly ground pepper
    1 Tbsp. capers, rinsed and drained (optional)
    1 Tbsp. minced fresh chives
Preparation
    Combine zucchini and red pepper strips in a microproof 1 1/2-quart casserole.
    Cover with lid or vented plastic wrap and microwave on High for 5 to 6 minutes or until crisp-tender.
