Ingredients

3 or 4 medium carrots, cut into 1-inch pieces
1/4 c. water
1/4 c. brown sugar
2 Tbsp. orange juice
1 tsp. orange peel, grated
1 1/2 Tbsp. butter
Preparation

Place carrots and water in a 1-quart casserole; cover with a tight fitting lid or plastic wrap.
Microwave on High, 100% power, for 6 to 8 minutes, or until tender.
Allow to stand 5 minutes, then drain.
Combine brown sugar, orange juice, orange peel and butter in a 1-cup measure.
Microwave on High, 100% power, for 1 1/2 to 2 minutes, or until hot and bubbly.
Pour over carrots; cover.
Microwave on High, 100%, for 1 to 2 minutes or until heated through.
