Ingredients

1 cup rice
1/2 cup sugar
2 tsp. cornstarch
1/2 tsp. salt
2 2/3 cups whole milk
2 strips lemon zest
2 Tbsp. butter
1 tsp. vanilla extract
4 egg yolks
1/2 tsp. ground cinnamon
Preparation

Bring 1 1/2 cups cold water to boil in a medium heavy-bottomed saucepan over high heat.
Stir in rice, reduce heat to low, cover and cook until water has been absorbed and rice is tender, 20-25 minutes.
