Maple Walnut Granola(Diabetic Approved) - cooking recipe

Ingredients
    2 cups chopped dates
    1 1/2 cup hot water
    1/2 cup apple juice concentrate
    1/2 cup walnuts
    1 Tbsp. vanilla
    1 tsp. maple flavoring
    12 cups rolled oats
    1 cup slivered almonds
    1/2 cup unsweentened, shredded coconut
Preparation
    Soak dates in hot water while preparing other ingredients. Combine next four ingredients and process in a blender until smooth.
    Place remaining ingredients in a large bowl and add blended ingredients.
    Mix well.
    Spread on cookie sheets and bake at 200\u00b0F for 2-4 hours, stirring occasionally until crisp and dry. This recipe yields no cholesterol.
