Seasoned Eggplant - cooking recipe

Ingredients
    Olive oil cooking spray
    1 large eggplant, unpeeled, cubed
    1 c. chopped onion
    1/2 c. chopped bell pepper
    1 large tomato
    6 cloves garlic, minced
    2 Tbsp. chopped parsley
    1 tsp. dried oregano leaves
    1/2 tsp. dried thyme leaves
    1/4 tsp. crushed red pepper
    1/2 c. chicken broth
    salt and pepper to taste
Preparation
    Spray large skillet with cooking spray, heat over medium heat until hot.
    Saute vegetables until crisp-tender.
    Add herbs and red pepper and cook for 2 minutes.
    Add broth to skillet and heat to boiling, reduce heat and simmer, covered, until vegetables are soft and most of the liquid is absorbed, for about 20 minutes.
    Add salt and pepper to taste.
