Squash Boats - cooking recipe
Ingredients

4 summer squash
6 to 8 slices bacon
1 green pepper
1 tomato, chopped fine
1 onion, chopped fine
1 c. shredded Cheddar cheese
Preparation

Cook bacon until crisp.
Cook squash 6 to 8 minutes until tender, but not too soft.
Cut in half lengthwise and scoop out and discard seeds.
Mix pepper, tomato, onion, bacon and Cheddar. Fill squash halves (boats); dot with butter and bake 20 minutes at 400\u00b0.
Serves 8.
