Holiday Sweet Potato Cake - cooking recipe
Ingredients

1 1/2 c. Wesson oil
2 c. sugar
4 eggs, separated
4 Tbsp. hot water
2 1/2 c. sifted cake flour
1 1/2 c. grated raw sweet potatoes
1 c. chopped nuts
1 1/2 tsp. vanilla
3 tsp. baking powder
1/4 tsp. salt
1 1/2 tsp. cinnamon
1 1/2 tsp. nutmeg
Preparation

Combine oil and sugar; beat until smooth.
Add egg yolks; beat well.
Add hot water and dry ingredients which have been sifted together.
Stir in sweet potatoes, nuts and vanilla; beat well. Beat egg whites until stiff and fold into mixture.
Bake in 3 greased 8-inch layer pans at 350\u00b0 for 25 or 30 minutes.
Cool completely before frosting with your choice of icing.
